12 oz bow tie pasta
1 cup cherry tomatoes, halved
1 cup cucumbers, diced
1/2 cup red bell pepper, chopped
1/2 cup red onion, thinly sliced
1/2 cup black olives, sliced
1/2 cup feta cheese, crumbled
1/2 cup salami, sliced
1/2 cup mayonnaise
1/4 cup Greek yogurt
2 tbsp red wine vinegar
1 tbsp olive oil
1 tsp Dijon mustard
1 clove garlic, minced
Salt and black pepper to taste
1/4 cup fresh basil, chopped
1/4 cup parsley, chopped
Instructions
Bring a large pot of salted water to a boil. Add the bow tie pasta and cook according to package instructions, typically 10-12 minutes, or until al dente. Drain and rinse under cold water to stop the cooking process. Set aside.
